Summer Stir-Fry

This is a great stir-fry recipe for a summer night. When I go shopping, I try and select produce that is local, in season, and I always buy organic. I also like to be aware of my emotions when I am shopping because it can influence what I am purchasing. Often times when I go to the store to pick out produce for a meal, I listen to my body and what it is saying to get. For example: I felt really excited when I was shopping as I had just bought a new Chef’s knife. I felt really happy and in tuned to my body when I was in the produce isle. My husband was with me, so I asked him to also think about what produce sounds really good to him. We made our selections. I felt happy and calm when I was cooking. This is important to me, because I want to be cooking from a positive place and not a negative. I don’t want to be adding negativity to the food I am serving those I love. And I felt delighted when I ate my meal. It turned out really good and it looked colorful and full of awesome fuel for my family and our bodies!

My Summer Stir-Fry Recipe

  • 4 garlic cloves minced
  • 1 cup of cooked truRoots Organic Sprouted Rice and Quinoa Blend Bag, 3 lbsIMG_4321
  • ½ yellow bell pepper, diced
  • 1 apple, diced
  • 1 handful of chopped endive
  • 2 cups cherry tomatoes
  • 2 cups leeks, chopped
  • 1 zucchini, chopped
  • 1 tablespoon of olive oil
  • ½ teaspoon of thyme
  • sea salt to taste
  • pinch of rosemary
  • 2 tablespoons of lemon juice or about one lemon fresh squeezed
  • a splash of lime juice

*Note: if you haven’t cooked with Leeks before… you are in for a treat. Make sure to wash them well after cutting them to make sure there is no sand left behind.

DirectionsIMG_4325: Sautee the olive oil, garlic, bell pepper, and zucchini for a couple minutes in a pan until veggies are cooking. Then add to the pan the leeks, apple, tomatoes, and endive. Next add the seasonings. Once the veggies are cooked to your liking, add in the cup of cooked quinoa and stir around. Lastly, add in the lemon and lime juice.

 

 

 

Serve immediately. Enjoy!
